I think it went really well but curious what anyone would do different. I had to 5oz beef tenderloins from a gifted Omaha steak package. Bagged the steaks with salt, pepper, butter, and rosemary. Bathed them for an hour and then seared over avocado oil. I think I could’ve let the oil heat up more before searing but I’m open to advice!

    Looks good OP. I read somewhere that you shouldn’t use fresh rosemary in your bags (and things like garlic) there are some who will shout and scream about butter (not that you did these just saying. The only thing that comes to my head that you should do differently is 2 things. The first is you may wish to wrap your pot to help keep the temp steady. The other is you really shouldn’t cook 2 steaks like this and not invite me over. Lol. So what temp and how long was the cook? I just had dinner and now you’re making me hungry again. Keep up the good work OP.

    Awesome for your first time out! As noted already, you could skip the butter. Agree on wrapping the pot, but I’d also suggest using a smaller container–This water bath canner is quite large for this application (but a great idea for a larger application, thanks for the idea!) You can use a small soup pot or Dutch oven for two steaks. I also highly recommend the red igloo 6 pack cooler with a hole cut in the lid for when you get hooked on the SV. 🙂 Also, did you cook this at 102.6? That seems quite low.
