White Cheddar Scalloped Potatoes with Pancetta
Prep:10 minutes Total: 1hr 20 minutes

Ingredients:
4 oz Pancetta, diced
4 tbsp unsalted butter
5 cloves of Garlic, minced
3-4 Sage leaves
A few sprigs of fresh or dry Rosemary (about 1 tsp)
1 can Campbell’s® Cream of Mushroom Soup
1c Milk (any fat percentage)
1/4c Heavy cream
Salt pepper to taste
Italian seasoning
6-7 springs of Thyme (about 1 ½ tbsp)
8 oz White cheddar (or more), shredded
1/2c Parmesan cheese, shredded
5 – 6 Yukon or Yellow Potatoes, thinly sliced about ¼” or less

TIPS: BE CAREFUL if using a mandolin to cut potatoes.
You could totally get creative using another flavor of Campbell’s® Soup, this is just a flavor I always keep on hand because I always have ingredients to make my mom’s tater tot hotdish! maybe you want to add some broccoli and make it a broccoli and cheese potato skillet! Either way, It’s affordable and interchangeable!

In a large skillet or oven safe pan, over medium heat add the pancetta, cook until crispy, about 10-12 minutes, remove from the pan, onto a paper towel lined plate, discard the fat, add the butter, sage, garlic, and rosemary to cook in the butter.

In the meantime, to a large bowl or liquid measuring cup, add the Campbell’s® Cream of Mushroom Soup, milk and cream, mix to combine.

Set oven to 375 degrees

Remove the sage from the pan, then add the Campbell’s® Cream of Mushroom Soup mixture to the pan, whisking until emulsified with the butter. Reserve a handful of cheese for garnish, add the rest to the sauce. Whisk until smooth. Add the potatoes to the cheese mixture, I like to place my potatoes in a horizontal angle so, so they all cook through and evenly distribute in the pan, add some additional time if you’d like for some extra flavor, Cover with a tight lid or foil to cook for about 45 minutes, remove from the oven, add some more cheese, the pancetta, and more thyme if you’d like for beautiful and delicious garnish, toss it back in the oven to cook for about 20-30 minutes, until golden and bubbly on top. Let this cool for a few minutes before you dig in! I recommend Serving with a side of roasted veg and protein, or anything else you can think of, Happy Holidays, Enjoy!
