Made with pasta, cherry tomatoes, red onion, fresh herbs, roasted artichoke hearts, and a simple homemade Italian dressing, this Christmas pasta salad is refreshing, juicy, and full of flavor and nutrients! FULL RECIPE:
1 lb of short pasta (fun shapes, corkscrews, rigatoni, rotini, shells, penne)
6 oz frozen artichoke hearts (feel free to use 12 oz if you want lots of artichokes!)
Marinade:
– juice from half a lemon
– 1 teaspoon minced garlic
– 1 tablespoon avocado oil
– 1 teaspoon onion powder
– 1 teaspoon dried oregano
– dash of sea salt and freshly ground black pepper
1/2 small red onion
10 oz cherry tomatoes
2 tablespoons freshly chopped parsley
0.5 oz fresh basil
Italian Salad Dressing:
SEASONING MIX:
– 1 Tablespoon garlic powder
– 1 Tablespoon onion powder
– 2 Tablespoon dried oregano
– 1/4 Teaspoon dried thyme
– 1 Teaspoon dried basil
– 1 Tablespoon dried parsley
– 1/4 Teaspoon celery salt
– 1 Tablespoon sea salt (can use 1/2 Tablespoon if you wish)
SALAD DRESSING:
– 2 Tablespoon seasoning mix
– 1/4 cup avocado oil
– 2 Tablespoon red wine vinegar
– 2 Tablespoon balsamic vinegar
– 1/4 cup & 2 tablespoons filtered water
1. Defrost artichoke heart in room temperature water. Then dry off with paper towel. Make marinade and pour on top. Roast in the oven at 375F for ~25 minutes.
2. Cook pasta to al dente. Drain off pasta water and add to a large serving dish.
3. Chop red onion, parsley, and basil. Halve cherry tomatoes. Add to pasta. Add on cooked artichoke hearts & more freshly ground black pepper.
4. Make salad dressing and pour 1/3 of bottle onto pasta. Toss this all together.
5. Serve or refrigerate overnight!
