


I made this chocolate cake according to the box instructions (using coconut oil, eggs, unsweetened almond milk). I found it at my local Grocery Outlet, which is my favorite grocery store of all time, as they often have deep discounts on this type of stuff. This mix was $1.49!
I then made the icing in my food processor as follows:
1/2 cup creamy almond butter
1/4 cup maple syrup (I’m sure you can use any sugar free substitute here to make this officially keto)
1/2 cup unsweetened cocoa powder
6 tbsp unsweetened almond milk
1/2 tsp vanilla extract
I adjusted my almond butter to get a thicker icing. It’s actually, in a word, divine.

Preheat to 375 F
1. Dump cake mix in a bowl
2. Add 5 eggs
3. 1/2 cup oil (I melted coconut oil)
4. 1/2 cup unsweetened almond milk
Mix til smooth. Grease an 8 inch cake pan or line with parchment. Bake for 40-50 minutes until knife entered in center comes out clean. Cool for ten minutes and then transfer out of pan. Apply icing while slightly warm for that “ganache” effect
