This is just lunch and dinner: shrimp spring rolls and salad jars. I made 4 salads and 12 rolls.

    For the spring rolls:

    1 rice paper
    3 shrimp (precooked, and sliced in half)
    Bean sprouts
    Cucumber
    Shaved carrots
    Lettuce

    Dip the rice paper in warm water for about 8 secs, dab with paper towel
    Add lettuce and shaved carrots, roll halfway
    Add cucumber and bean sprout, roll halfway
    Lay shrimp in a line, tuck in the left & right side of roll (like a burrito), then roll completely (will seal on it owns)

    Salad jars

    Romaine lettuce
    Shrimp (chopped)
    Shaved carrots
    Shredded cheese
    Red onion

    Dressing:
    1 tbsp Avocado oil
    1/4 tsp each Salt & pepper
    1 tbsp Lemon juice
    (Per jar)

    Chopped Romaine lettuce, slice onions, chop shrimp. Add dressing mix to bottom of jar, stir to combine.
    Layer cucumbers, carrots, onions, lettuce, and top with cheese.
