It reminded me of an disintegrating brain. I think you just need to present it differently. Maybe divide it and use molds to shape it. And instead of presenting it all on one plate, you can also plate it up with other food, so it becomes a part that completes a meal. I think that would help make it look a bit better.

Presentation. Honestly the color is less of a concern to me than the fact that it is sitting in a *pool* of oil.
Drain it a little, serve it over rice, put a garnish on (easiest would just be sprinkling some sesame seeds from a shaker or something, could do some spring onions if you want slightly more work). People will want to eat it then and I’m sure it tastes good
