
So fresh direct had a 'peak produce' for these and I thought I would grab a few. Got 4 lbs! They are very small, just opened one and they are like super sweet mini red onions. Any ideas for a minimal prep side for Christmas dinner tomorrow? Thanks in advance!

A hard roast with another vegetable to make it more welcoming to a mixed crowd, even carrots.
Luckily they keep a long time. It would be really easy to roast a chicken on top of a pound or two. Do that a couple times and you’ve used them up.

I just but a few whole in the oven like I roast garlic, olive oil, salt and pepper. Came out pretty yummy. The other one I tried some honey mixed with soy but too hot at 425 and tasted burnt

Pickle some! Equal parts rice wine vinegar and sugar, add some spices/seeds like cardamom, cumin, fennel, star annise. Throw em in a jar and they are ready in a few days! Delicious!

Caramelize a good portion and use them on literally everything. As another comment mentioned, roasting a loaf or chicken on top of a good amount of onions with carrots, Brussels, sweet potatoes, garlic (Any root veg tbh) will please an entire crowd

There’s a Mario Batali recipe for these types of onions, thyme, cream- it’s fantastic but I am having a hard time finding a link that is working. If you Google all the right words together – cippolini onions with cream Mario Batali Recipe- it should come up. I’ve made it a few holidays in a row. Worthy.
Roast and use as garnish
for minimal prep, blanch for 1-2 minutes then transfer to ice bath. From there, you can roast them up with some oil, spices, and vinegar.
Pickle them!
