Seasoned with SPG and smoked on my Pit Barrel Cooker over B&B Charlogs. This thing was delicious.

    Looks good.

I have a roast and was wondering if I can just go SPG on it. It seems like every seasoning recipe calls for rosemary, thyme and sometimes sage.

My thought is to put a layer of mustard and then the SPG and let it cook.

Omfg that looks so good. I just ate a monster breakfast and it’s still making me hungry.

Did you sear it after? How do? I’ve got one in my smoker. 120 internal in ~1.5 hours. Was thinking of searing it on the grill or at 500 in the oven

Looks great! Try to protect that cap next time and it won’t be as grey.

Anybody ever score their fat cap? I might do that next time.
