How to make bocconcini out of mozzarella. We know it sounds weird and redundant but let’s say you forgot to order bocconcini and all the stores are sold out but you still have access to shredded mozzarella bocconcini. This may or may have not been a real life kitchen scenario. It may not be ideal, but the end result is pretty close to a real Buffalo mozzarella ball especially if you cover it up with some olive oil and balsamic reduction. The instructions are pretty simple

Bring water to a boil and shut it off for a min and transfer some to a bowl. Reserve rest of water because you may need it for later when the cheese gets a bit too stiff to handle. Put desired amount of cheese into water and using the handle of a wooden spoon keep mixing cheese until it melts and starts to look like slime. At this point the cheese can be handled with a pair of gloves. Keep stretching the cheese and now squeeze the cheese into your fist and form balls. Keep the balls in cold water until ready to use
