    Used less peanut butter and instead of making a separate sauce for the tofu, just used the peanut dressing for everything.

    **Salad ingredients:** baby bok choy* (blanched), snow peas, red bell pepper, carrots, cabbage, radish, pan fried tofu, mint, cilantro, small amount of crushed peanut topping

    **dressing for THREE servings:** 1/2 T peanut butter, 2 T PB2, 1/8 c sesame oil, sambal oelek, lime juice, sweetener, 1 soy sauce, 1 tsp fresh ginger, white miso, water to thin

    *I would only use baby bok choy here, the full grown plant is too bitter for salads, in my opinion. Alternatively you could use some other crunchy vegetable.
