Anyone else have any experience with Global knives? The reviews seemed very mixed but I genuinely have a new favorite brand

    I like that handle. Pure steel can get slippery but I bet those divots help a lot with that. Congrats!

    I’ve had mine for 10 years. It holds an edge for my use really well. Just be careful with that part right where your pointer finger is. I’ve had a couple people cut themselves using it carelessly on that part.

    They’re great. A chef friend of ours got us one and I’m seriously considering replacing our entire block with them. Not cheap, but so worth it.

    Former pro chef, I’ve owned a lot of knives. I bought my first global around 1990 and it’s still my favorite workhorse knife.

    I believe in the book this subreddit is named after, Bourdain recommends Global for affordable but good knives. I love mine myself

  12. I love Globals. I have 13 of them. I have small hands, so the narrow tang never bothered me. Plus it kept chefs with bear paws from using my knives, since they hated the narrow tang. Never had an issue with them being slippery, no more than any other style of knife I have. I used them everyday for over 10 years.
    The 8 inch Global Chefs knife is the one Anthony Bourdain recommended as the best knife to get started with.
    Personally I think the Japanese steal is easier to sharpen than German steal. Might not hold the edge as long as Wustof, but they take less time to put a fantastic edge on. I started building another knife kit with Shun before I left the kitchen. They are more pricey than Global, but they are also fantastic knives.

  15. My parents got me a set of 5 Global knives for my birthday 4 years ago, the same style you have, and I’ve bought a couple more since. Absolutely love them so much 😁

    Former industry and currently the “kitchen lady” for our family: my daily knife is a Global chef’s knife. It’s my prized possession. I’ve had it sharpened, resharpened, sharpened it myself, dropped it, had it re-tipped, dropped it again. It shreds. I love it. Mirepoix for years.

    Hell yeah.

    Globals are our house knives. Very reliable. Easy to look after. Great workhorse.

    I have a few of these. I really like them.

    Be warned though, these are not nearly as durable as some of the hardened steel knives we are accustomed too. They will chip and break. I have seen *a lot* of global knives snap clean in half.

    If this isn’t the professional version, I’d keep it at home. They are great knives, but not as durable as there French and German counterparts.

    My ex bought me a set of three global knives for Christmas years ago. One of the only decent things he ever got me. Still use the knives every day, no longer have the ex 😂

    Shake the handle near your ear. They use sand in it to get the weight of the blade even. You should be able to hear it

    They are made of great metal, I had a full set and it got stolen from my car! Thank god! My hand was to big for them!

    If your hand is huge go for cheap o dalstrong gladiator! Same metal same edge retention!
