  • 1 cup sugar
  • 2 ripe, 1/2-pound mangoes, peeled, pitted and diced

Preparation

  1. Combine sugar and 3/4 cup water in small saucepan, and simmer until sugar dissolves. Remove from heat, and cool to room temperature.
  2. Combine cooled syrup, mango and lime juice in blender or food processor, and blend until smooth. Cover, and refrigerate until very cold.
  3. Stir mixture, and then freeze in ice cream maker according to manufacturer’s directions. Serve at once, softly frozen, or transfer to container and freeze at least 2 hours longer to harden.
