This has been a really fun learning experience and test in patience and trusting my gut.
This batch was:
– 450g bread flour – 270g water – 90g levain – 9g salt

Beautiful! The crumb, rise and bake all look great.
My only note is to be careful when you’re shaping, that “rathole” in the bottom left of your cross section is from trapped air from the shaping process.
But for your fourth ever loaf it’s BEAUTIFUL. I see people charging money for uglier loaves!

Beautiful! I love the honesty of it being your 4th loaf. Many people (cough cough everybody posting gorgeous loafs as 1st loafs) would make a new account and say that this was their 1st loaf for clout. You have a beautiful open structure, great rise, and very pretty loaf overall!
