3 chillies
5 garlic cloves
2 tins of tomatoes
Generous amount of evoo
Salt to taste

Remove garlic core, chop. Fry together with chopped chillies and salt until fragrant. Add first tin of tomatoes. Reduce until tomatoes fry and caramelise to deep, dark red. Add second tin. Simmer for an hour or so. Boil pasta in sufficiently salted water for about 8 minutes. Finish cooking in sauce with some extra pasta water. Turn off heat and cream with olive oil.
