COPYCAT RED LOBSTER CLAM CHOWDER
Here’s a copycat recipe for Red Lobster’s famous clam chowder:
Ingredients:
1/4 green onion (white part only) finely chopped
2 cloves garlic, minced
1/3 cup celery, finely chopped
1 cup heavy cream
2 cups whole milk
1 1/2 cups potatoes, peeled and diced
2 cans clams, drained and chopped (reserve juice)
1 bottle clam juice (236ml)
1/4 cup flour
1/3 cup butter
Salt to taste
1/4 teaspoon white pepper
1/4 teaspoon thyme (optional, for flavor)
Instructions:
1.In a large pot or Dutch oven, over medium heat, melt butter and sauté vegetables. Add the chopped celery and for about 4-5 minutes, stirring occasionally, until softened. Add chopped onions and garlic and cook until fragrant.
2.Sprinkle the flour over the softened vegetables and stir well to create a roux. Cook the roux for 2-3 minutes to remove the raw flour taste, stirring frequently.
4.Gradually pour in the whole milk and the reserved and bottled clam juice stirring continuously to avoid lumps.
5.Add the diced potatoes and thyme to the pot and cook for about 10-12 minutes, until the potatoes are tender but not falling apart.
6.Stir in the drained clams along with heavy cream. Let the chowder simmer for another 5 minutes, allowing the clams to heat through.
7. Add salt, and white pepper. Stir well and taste to adjust seasonings as needed.
Once the chowder has thickened to your liking, remove the pot from the heat.
8. Ladle the clam chowder into bowls and garnish with chopped parsley, if desired. Serve with warm crusty bread or crackers on the side.
