I’ve learned this recipe in a village in Romania in the Carpathian mountains. This comforting dish is easy to make and ideal for cozy dinners or gatherings. Super creamy, healthy and fast to prepare.

Ingredients: ✅

1 medium squash
1/2 onion
3 tomatoes
Bunch of fresh dill
1 tbsp olive oil
1 tsp salt

250 gr(or 0.5 pound) swiss chard
150 gr (or 1/3 cup) small green lentils
about 1 1/2 liters water

100g (or 1/2 cup) chopped onions
5 cloves minced garlic + 1 tsp salt
1 tsp dried mint
1 bunch chopped cilantro (30 g)
100 g diced carrots
150 g diced potatoes
1 tsp cumin

1/4 cup (60 ml) freshly squeezed lemon juice

This chickpeas curry is a Savier when you want something fast, nutritious, and delicious. It takes only 20 minutes to prepare and once you try it, you will want to cook it daily.
It’s also budget friendly and perfect for a family dinner.

Ingredients:

800 gr/30 oz of canned chickpeas
If you use dry chickpeas, keep in mind that they triple the size when cooked, so you need 300 gr / 10 oz dried chickpeas
1 medium size onion, diced
3 cloves of garlic,minced (sometimes I add 5 cloves for extra flavor)
1 tbsp of grated ginger
1 tbsp curry powder
1 tbsp cumin
1 tbsp garam masala
1teasp salt
1 can coconut milk (283mg/ 10oz), ideally full-fat and look for high quality ones if you are looking for an authentic taste
100 ml water or 1 tbsp oil (either olive oil or coconut oil) if you prefer to sauteè the onion this way
1 lemon
1 bunch cilantro

Prawns with coconut milk and yellow curry pasta

Ingredients:
1 medium onion
4 cloves of garlic
1 tbsp of fresh grated ginger
1 red bell pepper
1 zukkini
2 tbsp coconut milk
Pinch of salt
1 tbsp Yellow curry paste
250 gr prawns
100 ml water
1 lemon – about 2 tbsp of lemon juice
Coriander & parsley for extra flavour
Black pepper (optional)
