Hey guys, I attempted Omurice for the first time today. I tried following a tutorial for the eggs but they ended up scrambled. What did I do wrong? I used 3 eggs with salt and a little water. I used medium-low heat in a Teflon pan.

    The water and probably heat was your problem

    I add a little drop of neutral oil on low/barely med heat, once pan is hot I drop in the eggs and immediately start stirring. I only use eggs, only additives is seasoning

    Salt is fine but don’t do water

    You let it cook too long. It seems you had all the right conditions but it’s a skill issue. It’s your first time so if you want to practice you’re gonna have to go through several egg cartons.

    When you stir you create small egg curdles, then you let the bottom solidify just a bit, but you still need enough liquid egg to hold the small curdles as you flip it over.

    Use butter on medium-ish heat, go slow when you rotate the chopsticks so the egg does not rip, and let it set first. Letting it set is important so it stays in one piece without ripping. Takes some practice, but I do it now with ease. 

  4. Mixed for too long too. You mixed too much is the holes are not closing back behind your ustensile. You mix a bit first then stop, don’t need it to be cooked solid either.

    Personally do not put water it but a bit of mayo.

    It could be so many things. Too hot of a pan and/or not enough oil would by at the top of my list of suspects though.

    It takes practice, keep at it, you’ll get it! Lots of great advice has been posted already so I’ll refrain but looking forward to the next post!!

    you scrambled the eggs, thats the problem lol. not even trying to be a smartass.

    once the egg liquid solidifies you want to leave it as one big sheet, if you keep scrambling in the pan it will become scrambled eggs.
