3 plum tomatoes 1 bell pepper 2 tbsp tomato paste 1 onion 1 thumb-size fresh ginger 3 garlic gloves 1 scotch bonnet pepper 2 tbsp sunflower oil 2 cups sella basmati rice (Washed) 2 sprigs thyme (I used fresh but you can used dried) 2 bay leaves 1 tsp all purpose seasoning 1 cup chicken stock
Directions *Chop the tomatoes, onion, and bell pepper into chunks. Place into a blender/food processor together with the ginger, garlic, and scotch bonnet pepper. Then blitz into a smooth paste.
*Place a pot over medium heat, pour in the sunflower oil, and add tomato paste. Cook until oil is separated then add tomato mixture. Stir and allow to sizzle, then place a lid over it, reduce heat to low, and simmer for 20 minutes.
*After simmering for 20 minutes, remove the lid, then add the spices and seasonings (thyme, bay leaf, and all purpose). Stir altogether. Also pour in the rice and chicken stock and stir together.
*Place a piece of aluminium foil into the pot, covering the entire surface of the rice (this will keep the steam in), then place a lid over the pot. Cook for 20 minutes on low heat.
*Remove lid, and give the rice a gentle stir, then return the lid and cook for another 5 minutes.

This looks and sounds delicious. I just wanted to butt in and say that the combination of fish and rice is my perfect pairing. 👌 I love broiled salmon with a side of Herbes de Provence rice. Thanks for letting me intrude. 😋
