1kg Brussel sprouts

Pork & Chestnut Stuffing:
500g plain sausage meat mix
100g streaky bacon; finely chopped
1/2 large white onions; finely chopped
200g chestnuts; finely chopped

5g garlic powder
4tbsp panko
2tbsp wholegrain mustard

Gravy:
1kg Chicken wings
250g Onions; sliced

200ml white wine
200ml port
1 litre chicken stock
3 Thyme springs

Slurry (1 tbsp flour; 2 tbsp stock/water)
20g Dijon Mustard

500g eggs (8-9eggs)
350g flour
525g milk
5g salt

600g Carrot

75g Rice Flour

Lads. I've just carved the turkey which i cooked using the exact method you show here. I'm stunned, i have never had turkey so succulent and tasty, I'm really not exaggerating it's the best I've ever had.
Might also have something to do with the 2 bottles of champagne I've drank but I'm sure when i sobre up I'll agree 😂

Can't wait to try this again, maybe next year, but I'm going to reduce the brining time. 10% brine for 4 hours gave me the saltiest meat I've ever eaten. Breast meat was salvagable but the dark meat tasted cured. I'll also have to use a spice bag because the rosemary and thyme got stuck in the subcutaneous fat and I was unable to get it off and the meat has too strong a flavor.

Followed your turkey and sprout recipes for Christmas lunch. Brined the turkey for 36 hours in a herb brine, followed the video on deboning the legs and thighs and rolled and glazed in soy sauce, seville marmalade, honey and English mustard. What a game changer! Three vegetable dodging teenagers wolfed the sporuts down and demolished the dark meat, the turkey was moist with crispy skin and only took 70mins to cook. Making the gravy the days before was a great suggestion. Thanks for such an inspirational YT channel, love the energy and vibes. Can we have more vegetarian recipes? My wife is one and I'd like to be a better vegetarian cook. Happy New Year!

Hello boys! Love your videos! I'm having a problem. We recently moved house (rental), and our new house has TINY and almost useless hobs when comes to any pan with a bottom larger than 18cm. I see you have professional induction hobs in your videos (the Control Induction ones). I've tried two home-appliance hobs, and both only heat a tiny 13cm ring in the center, returned them both, absolutely useless. They never talk about the actual heating surface, only how small or large would "work" (that is, is able to be heated by the device). Do you have any tips or knowledge to share in getting large cooking surfaces nice and hot and even for a home-cook? I understand that a specific brand might be difficult for you to advice (I live in switzerland, not the UK, so perhaps different brands etc). Still, I'm at my wits end lol. I understand that this is slightly left-field and perhaps not interesting for you to answer. I thank you anyway for the great content and cross my fingers! Cheers and have a magnificent 2025!
