No need to sauté and don’t promote olive oil for Indian cooking which has high smoking point. Just use virgin coconut oil sauté is enough to get all nutrients.
Traditionally okra is sauted in til oil or peanut with lid covered on it and cooked slow so the flavour taste and health all tack and when we add coconut it becomes even more antioxidant but not olive as geographically not suitable to south indian climate…

I only use okra is by soakng in water overnight and drinking the water in the morning 7 days a week,peace shell/ ra,
A quick dip into the hot water, that will do just fine, no needs to cook any fancy way

Dr …once u use olive oil into heat. It will oxidize do u know that? Olive oil is good for dressing veggies. Coconut s the is good for cooking
