This was about 3 days of doing Ramen related things… which is half the fun of ramen right!
Prepping eggs to soak, Jenna to soak, making the Tare/dashi a few days out.
I bought a couple ducks and butchered them, then roasted the carcasses for the stock. Added the typical aromatics.
Did some black garlic oil, aroma oil, and crunchies(can’t remember the name), green onions, and cooked some shiitake in Tare sauce and brown sugar.
Made the New Wave Tokyo style noodles and they were fantastic! This was so rich and to die for I’ll be satisfied for a week.
