









11.29 lb USDA Choice from Costco with a mustard binder, "Lott Bull" red dirt, and my own coarse SPG. Went on the Yoder with a pan of beef broth and fat trimmings (to make beef tallow), and wrapped in butcher paper with the tallow. Complete after about 13 hours and rested until dinner.

Swear by my Yoder. I’ve been trying to perfect my brisket and am just wondering, fat side up or down for you in the Yoder? My last was a little dry for my taste (the family have accolades) but I didn’t feel it hit the mark, it was fat up, paper wrap at 160… I’m beginning to feel that brisket is my nemesis, lol. Wonderful job by the way!
