    Picanha getting more and more popular! Love it! For me for this cut its a bit too rare but I have to say you rendered the fat cap beautifully so I may be wrong on this. Ive never had picanha with fat that well rendered while also rare. Congrats on showing me something new, can you talk through how you accomplished it?

    Score that fat cap before you cut em into steaks, and all that fat melts and is delicious. Impressive sear otherwise.

    Went to the local butcher near my parents house back home yesterday, they had a picanha cut in there, but was scared to get it and got some NY strips instead. After seeing this, next time I go there I’m getting a picanha.
