If a board is sanitised correctly and looked after then it’s for whatever the fuck you want it to be. Local laws around this coloured board thing is garbage. These rules are designed to make it safe as possible practices for the lowest common denominator. Most high end places just clean and sanitise properly and use plain white boards all over the place, the fish room gets a fish board, the butcher room gets a butcher board, and the kitchen looks after their stuff
