13:00 – Put the stock on to simmer very low.
19:30 – Had myself a large gin.
20:00 – Strained the stock and left it on a rolling boil to reduce.
20:10 – Had another large gin and set an alarm.
22:00 – Woke up after unintentionally falling asleep and silenced alarm before falling asleep once again.
23:00 – Woke up to a kitchen full of smoke and the delicious demi-glace pictured above.

    As a former dishwasher, that’s at least a week long soak hidden under the pot sink because i’m too lazy to put in the elbow grease and effort involved to scrub it clean in a timely manner.

    Man, that’s a shame. Feels probably even worse than forgetting to put a pot in the sink under the strainer. lol

    So you got the pure essence of your chicken, nice. Crush it in pieces and put it in the salt grinder to use it for extra flavour.
