

I got the pack at Costco for a steal. It was 2 pieces that I had to tie up.
Both went on at 225 at 2am. The bigger piece took 10 hours to reach temp. The smaller one took a full 12 hours.
A rough chop and 20 minute loosely tented rest under some foil. Then pulled with hands and claws.
Ready to serve at 3pm
