1 cup frozen shredded hash browns
2 eggs
1 wedge light laughing cow cheese
2 slices turkey bacon, already cooked
1/4 cup ish shredded cheese. I used whatever I had left of a bag of mozzarella. Cheddar would be excellent.
Basically a single serving breakfast casserole, all the ingredients dumped into a bowl and microwaved until it looked done, about 3minutes 30seconds.
Could reduce the calorie count further with egg whites instead of eggs, and bulk up the volume with peppers, onions, mushrooms, or whatever vegetables if you want. But I’m recovering from the flu and there’s no way I’m gonna stand in the kitchen long enough to dice vegetables.
I meant to add salt and pepper but forgot, but the salt in the cheese and bacon is doing a lot of heavy lifting on its own.
Some hot sauce would probably be good too.
