First time using this after my wife gave it to me for Christmas. 132 for 2.5 hours. Ice bath for 10 min, pat dry.

Sear for 2 minutes in each side until oil was smoking.

Please let me know if you have other ideas to make this better!

    Gorgeous.Only way to make that better is to dip in prik nam pla that you made yourself. Trust me on that it’s insane on steak.

    Salt the steak, put it on a pan with a wire rack, let it sit, uncovered, in the fridge overnight (dry brining). Then do whatever you did again because that looks tasty.

    Looks great. Last thing to try is let butter melt over it at the end of sear then baste it for bit

  5. I’d like that fat cap seared and rendered a tad more. Definitely recommend a dry brine too. But looks pretty awesome! Hope it was tasty.
