I went to Toro Toro in Toronto, and ordered the Emperor Roll, which is described as ‘tuna, salmon, butterfish, and cooked shrimp,’ so I was surprised to see this in it! It wasn’t bad, just unexpected. It was crunchy and slightly sweet. Any ideas?

    Takuan, or a type of oshinko (pickles) made from daikon radish. It’s a Korean and Japanese staple.

    It’s takuan, a type of pickled daikon radish. It’s usually used as a palate cleanser.

    Oshinko, shiso, cucumber, togarashi, and some yuzu-pon makes an amazingly fresh maki!
