As you can see I remembered to take a picture halfway through eating it 😅 but anyways it’s a whole super filling skillet! Recipe is:
1 14.5 oz can of roasted large tomatoes (105)
66 g red bell pepper (20)
68 g onion (27)
2 large eggs (144)
1/2 tsp garlic powder (5)
1/2 tsp cumin (6)
1/2 tsp paprika (3)
2 slices of Keto bread (70)
Just sauté the chopped pepper and onion (I used water to do it) until the onion is translucent. Add the seasoning and tomatoes, break them down, make two wells for the eggs, and let them cook for a few minutes. I like to toast two slices of 35 calorie keto bread and slice them afterwards to make it pretty! This is one of my go tos and it always leaves me very satisfied. Kind of feels too good to be true sometimes lol
