I used tagliatelle egg pasta. The pancetta was cut too large, and I should have picked different cuts of meat- I used 300g brisket and 100g “stewing pork”, which ended up chewier than I’d have liked. Added parmigiano regiano once it was plated! Followed the official recipe, but I added a bay leaf and nutmeg. It turned out awesome. My partner, who orders this every time we eat at an Italian restaurant, licked their plate clean, so I’d say it was a success 🙂
