Pasta Primavera Recipe
* 1 lb Penne * 2 cloves of garlic, minced * 1 lb Asparagus, chopped into 1 in pieces * 2 pints Grape Tomatoes, halved * 1 bag Frozen Broccoli (12 oz), rough chopped * 1 Can Artichoke Hearts (14 oz), drained and chopped * 2 tbsp Capers * 4 tbsp Butter, divided * 4 tbsp Kosher Salt (3 for pasta water, one for dish, or to taste) * 2 tbsp Extra Virgin Olive Oil * 2 tsp Red Pepper Flakes (or to taste) * 2 tsp Lemon Juice * 1/2 cup of grated parmesan
1. Bring 10 quarts of salted water to boil (use about 3 tbsp of salt) and boil penne per package instructions, save 1 cup of pasta water before draining 2. While pasta cooks, heat skillet over medium high and melt 2 tbsp butter 3. When hot, saute garlic for 1-2 min 4. Add asparagus and broccoli, season with salt, and saute until tender, about 6-8 min, stir occasionally 5. Add red pepper flakes to vegetables, cook for 1-2 min 6. Add artichoke hearts, cook for 3 minutes 7. Add remaining butter, tomatoes, and capers. Cook until butter is melted. 8. Toss skillet to coat contents 9. Remove from heat and combine with drained pasta, parmesan and olive oil 10. Add pasta water, a little at a time, and toss until thickened
Salt is a wild-ass guess. I tend to be heavy handed with salt.
Forgot to add the parmesan in the listed cost: If using the green can stuff, it would be $3.68/serving
