I remember reading an article of a study conducted in America where the participants did a blind taste test of tomato sauces. The majority of them preferred the lower-value processed sauce to those with fresh ingredients because that’s what their tastebuds were used to. Don’t quote me here, I read it a while ago.
Maybe your partner is similarly afflicted? That perhaps they’re so used to cheap, processed crap that they prefer it over the proper stuff?

I would actually be curious what exactly he dislikes in the smell. A friend of mine had a sister who couldn’t stand the smell of certain yeast. Both fresh and when used in baking. There are lots of different weird things how we human react on, it might be something to check it out. Then you can experiment with something else instead.

Check again your yeast to flour ratio or if your bread is overproofed , if it is it’ll smell yeasty and sour so it’s probably that yeasty smell that your partner dislikes. If not, just make enough for 1 person 🙂

Ok hear me out–I didn’t like potatoes much growing up and I was later diagnosed with a mild allergy. So mild I never noticed it until I was doing a scratch panel for everything under the sun. Maybe he’s mildly allergic to the point where he wouldn’t notice a reaction, but it manifests as him not liking it.
If that’s not it he’s crazy, I’ve never seen anyone not like at least the smell 😂
