This is my second time making sourdough, following Joshua Weissman’s ultimate sourdough recipe (only modification is parchment paper and 2 ice cubes). It came out amazing. Anybody struggling with getting a great loaf, just watch his video. It’s pretty involved but so worth it.

You left out yeast/levain/microbe-bros in your question. That’s why though– same reason whiskey, wine, beer, coffee, chocolate, and even in some cases particular teas are to die for.
