Today was the first time I ever manned an event by myself. I made everything on this plate from scratch, the hollandaise didn’t hold very well unfortunately but it took me 2 days to prep all this shit. Please critique/hate, either works for me. I’m still proud.
Roast beast with au jus & compound butter, duchess potatoes, garlic compote skrimps, asparagus with hollandaise & pretty flower

I’m just confused by the flower. It is very pretty, but you could do a better garnish. Parsley, paprika, pepper would be the easy choices. What about caper berries, grape leaves, or even some updog?
I would still eat the shit out of this meal
Some people will nitpick this and point out some flaws but remember, everybody’s skill level is a journey. Some people will look at this and say “Wow, that looks INCREDIBLE” and others will say “LOL, he paired ________ with ________”
Personally while I see a few small things that could have been improved, I will say Well Done!!!! If I was a customer and got served this I would be THRILLED!
First things first. Great Job. This looks like a nicely composed plate with a good amount of effort and thought put in.
I will make some suggestions but that doesn’t mean you didn’t kick ass. It just ain’t perfect yet nothing is.
A little glazing of butter or some moisture on the shrimp might help. I think butter on shrimp suace on beef would probably work best. As the melted butter with the sauce is gonna start
I’m also generally not a fan of floral garnishes unless the flavor is intended for the dish.
The hollandaise would probably benefit from just a touch of water to thin it out since it tightened up while being held.
And maybe slide the asparagus slightly to the left to take up some of that space y the potato..

That hollandaise looks pretty rough but I think I’d be happy eating this plate at a lower price point. We all start somewhere.
Plating needs a little work. Plate is very flat. Try to stack more, especially with something like asparagus.
Roast is super overcooked for my liking. I personally wouldn’t go above 135.
Try to roast veg when you can, including the asparagus. It kind of looks raw in this picture.
Potatoes look great.
What’s with the fucking flower. Is your guest meant to eat it? Don’t garnish with stuff that isn’t meant to pair with the meal. You’re adding for the sake of adding. Doesn’t actually add anything. Use veg and sauce to add colour.

If you’re proud of your work then that’s all that matters. Keep building on what you know and continue to go from great to amazing!
The shrimps look like they shat all over the asparagus 😕
It looks fine and I’d eat it, your hollandaise is better than many. However the flower is a bit big and rather questionable (use petals sparingly, they don’t taste very nice, also it’s covered your nice piping on the potatoes) and it overall looks like a collection of things rather than a cohesive dish – there’s nothing tying it all together

For assisted living, this is SUPREME, nice work, I have done some work for people in this demographic and it is TOUGH to fit all the dietary restrictions and overall safety requirements required.
I would second u/s33n_ on the shrimpies, something to help it out would be a choice move, even some chopped herb would be a good addition.
But this looks like it would be considered a special meal by most, and that is the name of the game.

The fact this is a nursing home kitchen makes it more impressive. I don’t even need to critique at this point. You know what you have to work with, you know where you’ve been and you know where you’re going. Push ahead Chef.

100% kick ass job. Saw this was for an assisted living so that elevates this meal to heaven and back!
I don’t want to pick on this but you asked. That roast beef is way over cooked. I assume this is due to your clientele but still, not near enough pink to scream roast beef.
The shrimp also seems overcooked/dry. Maybe some butter on them?
I think parsley would be a better garnish, but that is probably a personal opinion as I don’t usually care for flowers on my food.
Again I want to stress that if I was getting that meal I would not complain in the slightest and finding out you did this for assisted living makes this insanely awesome! I hope your clients love you!
Excellent plating with the edible flower! Just the right amount of hollandaise, and it has my former head chef’s approval in my mind “like it fell from the sky” cussies eat with their eyes, so this would land your server a nice tip IMHO.
