Im starting to learn this question is entirely in the eye of the beholder. I prefer denser, more flavorful loaves so i break all sorts of rules. If it tastes good and you like it more than store-bought, then whats the problem? Looks good to me

This is in the range of “normal” to me. My preference is a crumb that is denser. But this is a fluffy open crumb many people desire because it’s got a lot of bread but the holes are large enough to catch plenty of butter.

Need more pics, please. Did your crust split on the top or bottom. If you “squish” the crumb, does it come back… Looks just lovely, way to go! Happy New Year 🥳

I see good crumb, good spring, an ear, and fine bubbling in the crust. To my preference I’d say it’s just right.
Is the taste good? What about it to you is unsatisfactory? If it’s gummy you may have cut open too soon but at this point I’m just making guesses 🤣

It’s great bread. Don’t analyze it, put warm butter or olive oil on it and keep making them this way cuz you nailed it.
