    Hamachi (yellowtail). This is not my preferred cut because of the stronger flavor on the red, like you mentioned.

    God I would eat the hell out of that. How are people eating sushi yet not knowing what they’re eating? Can’t you ask the server or chef?

    Like everyone else has said, that’s a type of tuna called Yellowtail or Hamachi. The red part of the fish is part of the “bloodline” that’s usually cut off of most fish because it carries a flavor that many people consider undesirable. Normally you’d only get the white of the flesh.
