I made a 5 course meal for my family at home on New Year's Eve this year and it turned out amazingly well!

1st course: marinated beets with cashew cream, micro greens and basil oil
2nd course: vegan "scallops" (king oyster mushrooms), fried with garlic, lemon and parsley
3rd course: celeriac, apple and leek soup with roasted toppings, chive and parsley oil and oat cream
4th course: main course, marinated tofu "steak", red wine reduction, oven-roasted carrots, fried potato cubes and parsnip puree
5th course: dessert, deconstructed (I know, I know…) chocolate-orange tart: almond and vegan butter "biscuit crumbs", chocolate-orange ganache, vegan marshmallow cream and topped with orange and brittle
I'm really proud of myself, I've never cooked so many courses before and the flavors were so amazing, so many combinations I haven't tried before.
