I haven't had time to make English muffins this week, and my son won't eat eggs anyway and wanted waffles, so I went ahead with the original plan anyway and made eggs Benedict except on eagles for the rest of us.
Added some quick oats to the waffle batter which went well (son is still eating and is on his fifth waffle.)
Usually my hollandaise is too thin but this time I actually had to add water twice to keep it from being too thick and it came out perfect!
My SIL thinks we have too much butter in our diet, but since she only visits in the Thanksgiving to Christmas/New Year timeframe I think maybe she doesn't have the most representative sampling of our normal diet, haha!

Waffle (the way I make them using butter and not oil) would be too rich detracting from the other ingredients. This looks different though, so curious about the recipe / results.
