I don’t eat a lot of steak, but my tradition began the year an ex broke up with me. Figured that if I was going to spend NYE alone, I’d at least eat well. Went to the local butcher shop, told the nice lady behind the counter, “I don’t know which one is best so I’ll take whatever you recommend” and she got me a bone-in ribeye. I continued to make ribeyes using the reverse-sear method for the next 5 years.
My tradition has come to include friends some years and new girlfriends other years. Even on years where I’ve gone out, before I go anywhere, I make the nicest steak I can get the “fanciest” way I know how.
This year I opted to switch it up for a filet mignon and forward-seared it. I got the chance to eat at 801 Chophouse earlier this year and attempted to recreate their brussel sprouts, which had a red onion marmalade on top. And then I also got to eat at one of Gordon Ramsey’s restaurants where my meal came with some brown butter mashed carrots, so I attempted to recreate those. And there are some chanterelle mushrooms on top just for good measure.
My steak was obviously still pretty rare, but it was so tender. And the veggies turned out better than I could’ve hoped for.
