My mother would put alternating layers of sauerkraut and pork chops in a big covered casserole. Just pepper on the chops, and always served with mashed potatoes. I make it a few times a year myself, all these decades later.
If no sauerkraut is handy, I find shredded green cabbage and a cup or two of beer make a good substitute version.

Hell yeah. That’s a great meal in my opinion. Just needs a veggie and applesauce or applesauce gravy to pair witg the pulled pork. I have never thought of having saurkraut with pork. I always have it with bratwurst.
