Recipes from the heart, episode 28: Marble cake
(Version two of the marble cake this one is made with butter instead of olive oil)
Ingredients
125g butter, at room temperature
125g granulated sugar
2 eggs, at room temperature
125g self raising flour
2 tsps vanillin sugar
30mls orange juice
30 mls full fat milk
20g cocoa powder, sifted
Method
Preheat the oven to 170°C. Line a loaf tin with baking paper.
Beat the butter and the sugar in a mixer at high speed until the mixture is fluffy and the sugar dissolves completely.
Add the eggs, one at a time, waiting for the first egg to be fully completely incorporated into the mixture before adding the next. Scrape down the sides of the bowl when necessary and continue beating.
Add the vanillin sugar, orange juice and milk, and beat briefly again.
Add the flour and gently fold the mixture with a spatula.
Separate the mixture into two bowls. One with the vanilla mix and the other with the 20g cocoa powder. Mix until the the cocoa powder dissolves completely. Pour into the loaf tin, alternating between the two mixtures and finally use a skewer create swirls in the batter.
Bake the cake for 25-30 minutes or until you insert a skewer into the cake and it comes out clean.
Allow to cool for 15 minutes, unmold the cake, and cut the cake into slices, and serve.
