   Depends of what you like, of course, but why not try Melanzane alla Parmigiana, a risotto or Pasta e fagioli?

   A vodka and tomato sauce (mostly tomato paste but varies) was really popular in the late 80s. Relatively easy. Very tasty. Or a nice pesto?

   Or you could aim for the main roman sauces. Cacio e pepe. Gricia. Carbonara. Amatriciana.

   These also teach great techniques for other dishes.
