📝 Ingredients:
• 1.5 kg (3.3 lbs) potatoes
• 1 tsp salt
• 1/2 tsp bicarbonate of soda (baking soda)
• 3 fresh rosemary sprigs
• 4 garlic cloves, crushed
• 1 red chili, sliced
• Fresh thyme (a few sprigs)
• 1/4 cup olive oil

🍽️ Instructions:

1. Prepare the Potatoes:
Peel and cut the potatoes into even-sized chunks. Rinse the potatoes under cold water to remove excess starch.

2. Boil the Potatoes:
Fill a large pot with water and bring it to a boil. o Add 1 tsp of salt and 1/2 tsp of bicarbonate of soda to the boiling water. Add the potatoes to the pot and boil for about 10 minutes, or until they are just tender but not fully cooked. Drain the potatoes and let them steam dry in a colander.

3. Infuse the Oil:
In a small saucepan, heat 1/4 cup of olive oil over medium heat. Add the fresh rosemary sprigs, crushed garlic cloves, sliced red chili, and fresh thyme to the oil. Let the flavors infuse for about 5 minutes, stirring occasionally. Be careful not to burn the garlic. Remove the saucepan from the heat and strain the infused oil through a fine mesh sieve, discarding the solids.

4. Coat the Potatoes:
Preheat your oven to 220°C (425°F). In a large bowl, toss the drained potatoes with the infused oil, ensuring they are evenly coated. Spread the potatoes out on a baking sheet in a single layer.

5. Bake the Potatoes:
Place the baking sheet in the preheated oven. Bake for 15 minutes, then take the baking sheet out and turn the potatoes. Return the baking sheet to the oven and bake for an additional 15 minutes, or until the potatoes are golden brown and crispy on all sides.

6. Serve:
Remove the crispy potatoes from the oven and season with additional salt to taste, if desired. Garnish with extra fresh rosemary and thyme if you like.
