




Back home after long stretch away for the holidays. Friend was still in town so used that as an excuse to invite friends over for smoking some ribs on my recently purchased PitBoss ProV3 1150. Sadly on the out of town friend made it but that didn’t stop us from enjoying these St. Louis Ribs!
Follow Meat Churches recipe pretty close, using the Gospel and Honey Hog rubs I had on hand. The darkest ribs were a combo of the ribs with a light black pepper base, and on the wrap added some hot honey.
Smoke tube I got for Christmas had pellets and some hickory chips, which ended up catching fire and burning one end of the hot honey rack, but the salvageable bits made for good crispy topper for a bowl of black eyed peas for dinner.
Wanted to take them off a little earlier while they still had a little bite/chew to them but friend arrived and got distracted talking and showing off my new house. Very tender ribs just falling off the bones. Looking forward to leftovers for next few days!
