2” chops, 140 for 3h 15m, seared in cast iron, then pan deglazed for the mustard whisky sauce! Pretty pretty good!

    Oooh nice!!

    I’ve got mine in right now for 2 hours at 145, they’re like 1 inch thick only. First time with pork, hope it turns out half as good as yours!
