    Big oysters aren’t a preferred item. Add in ice diluting the flavor and it’s all bad.

    Imagine those beauties fried whole, serve on a local tortilla over a bed of pickled veggie slaw and a quick bite of habanero salsa atop? They were quite amazing.

    Yeah, those are big. My general guideline is that any oyster that could be used to break the windshield on a police car is too large to serve raw. They’d be good in a gumbo or fried in a Po’ Boy or even broiled with a Rockefeller or similar preparation. Not always great raw when they’re that size, but if they fit on a saltine, I’d give it a shot as long as you have some hot sauce and fresh lemon.

    For a second, these reminded me of a prep I used to do where we macerated minced shallots in white balsamic vinegar, set it with gelatin overnight and then cut it into cubes the following day. We called it “Balsamic Ice” and it was really interesting. But I have a feeling that’s not what we’re seeing here.

    Former oyster farmer. Those look to be about the lage size we sell for grilling or frying. I would not recommend eating them raw. The texture and taste are very different. Just a quick brag,the farm o worked for currently have a 36 inch oyster in a tank on display for people to see when they come in. And why I was harvesting 3 or 4 years ago, I would pull tons of 12-24 inch that we set aside for non eating.
