Raspberry Lemon Loaf 🍋recipe below

Nothing says spring like a warm lemon loaf with fresh raspberries tucked inside. I love taking a slice for a quick breakfast on the run with my coffee or eating as a sweet treat after dinner.

LOAF
– 2 cups all-purpose flour
– 1 tsp baking powder
– 1/2 tsp baking soda
– 1/2 tsp salt
– 1/2 cup salted butter, softened
– 1 cup white sugar
– 1 tbsp lemon juice
– 1 tbsp lemon zest
– 1 tsp vanilla extract
– 2 large eggs
– 1 cup whole milk
– 1/4 cup sour cream or Greek yogurt
– 1 cup fresh raspberries

GLAZE
– 1 tbsp melted salted butter
– 1 tsp lemon juice
– 1/2 tsp lemon zest
– 1 cup powdered sugar
– 2 tbsp milk

1. Preheat oven to 350ºF; line a loaf pan with parchment paper.
2. Whisk together flour, baking powder, baking soda, and salt.
3. Cream butter and sugar; add lemon juice, zest, vanilla, and eggs; mix in milk and sour cream.
4. Combine wet and dry ingredients; fold in raspberries coated with 1 tbsp flour.
5. Pour batter into the pan; bake for 1 hour and 20 minutes.
6. Mix melted butter, lemon juice, zest, powdered sugar, and milk for the glaze.
7. Let the loaf cool for 10 minutes; drizzle glaze on top. Allow it to rest for an hour before slicing.

Potato & Leek Soup 🥔 recipe below
Recipe
-4 leeks, thinly sliced & chopped
-2 celery stalks, diced
-4 gold potatoes, peeled and cubed
-4 cups chicken broth
-4 tbsp olive oil
-3 garlic cloves, minced
-1 anchovy fillet (optional)
-1 tsp ground coriander
-1 tsp fennel seeds
-salt & pepper to taste

1.In a medium heat large pot, heat 2 tbsp of olive oil. Add the thinly sliced leeks and finely diced celery. Cover and cook for approximately 20 minutes until they become tender.
2.Create a well in the center. Add 2 tbsp of olive oil along with the anchovy fillet, garlic, ground coriander, fennel seeds, salt, and pepper. Mix these ingredients together.
3.Add the diced potatoes and pour in chicken broth. Cover the pot and bring it to a boil. Let it simmer until the potatoes are soft and easily break apart.
4.Blend the ingredients in the pot using an immersion blender until smooth.
5.Garnish your soup with fried leeks, freshly prepared croutons, and heavy cream.
