    I’ve never tried it myself but a trick I’ve heard of, you proof in the oven with the light on. If it’s a halogen it gives off a little heat and the oven is insulated enough to trap it and work as a proofer.

    What I do to proof dough when it’s cold is bring it to bed with me. Literally, just put clingfilm over the bowl, put the bowl under the sheets, and climb in with it, preferably with the bowl settled between my legs. Body heat it enough for the dough to get cosy enough to prove well

    Next time turn on the oven for five minutes then turn it off. When it cools down a little you can proof in it

    Old trick. Use the light in the oven. Usually enough to get up a few degrees
