I made a loaf of sandwich sourdough bread with unfed discard
Google said I couldn't without yeast, but I did it, and it's good. I'm new to bread making and some of the rules are hard to stick to. I keep trying to bend where I can and I think this is a win.

Baking bread is first learning the basics/method, then mostly trying things out for yourself. If you make enough bread, you’ll get to a point where you can just ✨know✨ when the dough is right. It’s magical. Keep at it! 👍

I make sandwich bread in my machine with discard and some yeast. I find that it’s quite a tall loaf, probably because I feed right before setting up the bread machine, so there must be a fair amount of active yeast left… maybe tomorrow I’ll try using just the discard alone!
